Cozy Shack-Inspired Rice Pudding Recipe
Well, look who’s all grown up and eating rice pudding like a boss! Who would have thought that the same person who used to turn their nose up at the mere mention of rice pudding would one day be singing its praises from the rooftops? It’s like finding out your arch-nemesis has suddenly become your best friend – unexpected but oh-so-sweet. And speaking of sweets, have you tried Cozy Shack’s rice pudding? It’s like a warm hug in a bowl. The older I got, my lactose intolerance grew, and Cozy Shack’s rice pudding was a no-go. I wanted to create a recipe that tasted like Cozy Shack’s and was safe for my tummy. After trying a few recipes, I felt like there was always something missing. I combined different recipes and finally found a suitable rice pudding recipe that gave me the same warm hug that Cozy Shack gave.
This recipe is excellent for dairy-free, gluten-free, and vegan individuals!
Ingredients
1 cup of arborio rice (this is my favorite one)
4 cups of vanilla almond milk (you can use oat milk or soymilk)
1/8 tsp of salt
1 tsp of vanilla extract
2 cinnamon sticks
¼ cup maple syrup (more if you want a sweeter pudding)
1/8 tsp of ground cinnamon or ground nutmeg
Directions
- Combine rice with 3 cups of almond milk, salt, and cinnamon sticks in a medium saucepan.
- Bring to a boil over medium-high heat, stirring often. I like to go the rice every 10 to 15 minutes to prevent the rice from sticking to the bottom of the pan and for the milk to boil over.
- Reduce the heat to medium-low and simmer gently, stirring every 10 to 15 minutes, for 30 to 40 minutes. Add the rest of the almond milk and continue stirring and cooking the rice until thoroughly cooked.
- Stir in the maple syrup and continue cooking. Rice pudding is done when most of the milk has been absorbed.
- Remove the cinnamon sticks.
- Serve warm or cool, with ground cinnamon or nutmeg on top.
